Stages of coffee roasting

Drying

The first step is to dry the coffee beans. The coffee beans should have around 10% humidity. The drying process will result in coffee beans turning yellow, which will be in a rotating drum for around 8 minutes. The temperature will be 160⁰C. This will help dry the coffee beans but not burn them.

Roasting

The next step is roasting. During this step, coffee beans will develop the flavor and color. The roasting drum is set at 200 to 230⁰C for around 15 minutes. Here, the Maillard reaction happens. The sugar and amino acids in coffee will react to make new color and Aroma compounds. This results in the taste and smell of coffee beans you may be aware of. Cooling

The last step of the coffee roasting phases is cooling. At this stage, the coffee roasters will stop the roasting process and bring the beans to room temperature. When the temperature reduces abruptly, the beans will easily store the unique flavor. This step takes around 5 minutes. After the coffee beans are cooled, they are perfectly ready to be ground.
